Place wraps on a clean work surface. Top each wrap with a slice of prosciutto. Top with eggplant, bocconcini, tomatoes, rocket and hommus. Season with salt and pepper. Roll up firmly to enclose filling.
Wrap in non-stick baking paper and serve immediately.
