- Toast your chosen bread.
- On the base spread a layer of the ricotta on each slice.
- In a small bowl scoop out the avocado flesh and lighty mash it with a dash of lemon juice.
- Lightly spread the avocado on top of the ricotta, top with the shredded basil leaves, salt and pepper and a drizzle of Balsamic vinegar on each slice.. Serve with a few cherry tomatoes for some extra zing!
