These loaded sweet potatoes bring together vibrant colours, nourishing plant-based ingredients, and a touch of spice to create a dish that feels both wholesome and indulgent. Easy Steps to Make It

  1. Soak the black beans in water for at least 4 hours, then cook, cool, and set aside.

  2. Preheat the oven to 180°C.

  3. Line a tray with baking paper and lightly brush with olive oil.

  4. Place the halved sweet potatoes on the tray. Drizzle with olive oil, sprinkle with cumin, cayenne, salt, and pepper. Roast for 30 to 35 minutes, or until tender when pierced with a fork.

  6. Once the potatoes are ready, spoon over the black beans and the avocado mix.
