Corn and Zucchini Fritters

Corn and Zucchini Fritters

Method

  1. Whisk together the corn, zucchini, eggs and milk. Gradually stir in the sifted flour and cumin, salt and pepper.
  2. Heat a little oil in a non-stick frying pan over medium heat. Using a tablespoon, place heaped spoonfuls of the mixture in the pan and cook in batches. Using a spatula, turn them once, until golden and cooked through.
  3. Drain on paper towel, cover and keep warm as you cook remaining fritters.
  4. Serve the cakes with chopped tomato, avocado, coriander leaves and sweet chili sauce.

Amazing help

Thank you for for creating Happy Hormones! This product together with the liva detox have been an immense help to my well being this year. This is the first of many repeat orders I will be making. Since I began using these products in January this year my hot flushes and mood swings have gone, my cycle is regular again and my premenstrual symptoms are almost non existent. Just did my first order of Happy Hormones... I hope it works! πŸ™
