Comfort in a Bowl

This nourishing soup is the perfect mix of simplicity and satisfaction. Packed with wholesome vegetables, quinoa, and a gentle boost of collagen, it is a lovely option when you want something warming and restorative. You are going to love how creamy and flavoursome it becomes, all without dairy. Whether you are looking to support skin health, bring more plant-based goodness into your day, or simply enjoy a cosy meal, this soup is a beautiful choice to have on hand.

Simple Steps to Create

  1. Soak the quinoa for 1 to 2 hours, rinse well, and set aside.

  2. Preheat the oven to 150 °C and line a tray with baking paper. Lightly coat with olive oil.

  3. Spread the cauliflower and broccoli florets on the tray and roast for about 20 minutes until soft and slightly golden.

  4. While roasting, cook the quinoa in water. Bring to a boil, then reduce to low, cover, and cook for around 15 minutes until fluffy. Set aside.

  5. In a large soup pot, gently sauté the garlic, onion, and leeks until soft and fragrant. Add a splash of water and simmer for 10 minutes to build flavour.

  6. Add celery, roasted broccoli and cauliflower, thyme, parsley, bay leaves, and seasoning to the pot. Pour in enough water to cover the vegetables, then cover and simmer on low for 20 minutes.

  7. Squeeze in the lemon, stir through the Happy Collagen, and let it dissolve completely.

  8. Remove the bay leaves, allow to cool slightly, then blend until smooth. Stir through the cooked quinoa for added texture and nourishment.

  9. Serve warm, and if you like, finish with a drizzle of coconut milk for extra creaminess.

Why Your Body Will Thank You

Cauliflower and broccoli are both rich in natural compounds that support everyday wellbeing, particularly when it comes to skin health and digestion. Quinoa adds plant-based protein and fibre, helping this soup feel satisfying while still light. With the addition of collagen, it becomes a nourishing option to include as part of a balanced diet.
