Method
- Pre-heat oven to 180°C and line a muffin tin with muffin cases.
- In a stand up mixer or blender, mix the eggs, ghee or oil, vanilla and sugar.
- In a separate bowl mix the dry ingredients.
- Combine both wet and dry ingredients and mix well.
- Bake 20 minutes or until golden brown.
- Pour into the muffin tin, filling each cup to about ½ full.
- Bake 20 minutes or until golden brown.
- Remove from the oven and let cool.
- I like to serve out of the muffin case and upside down is pretty.
- Enjoy!
