Wholesome Pesto Pasta Salad with Lentils & Kale

This hearty pasta salad is a brilliant way to pack plant protein, fibre and greens into one satisfying dish. It’s light enough for lunch but filling enough for dinner, and makes a great next-day meal too. With lentils, legume-based pasta, kale and a zesty pesto dressing, it’s ideal for anyone looking to support digestion, energy and real-food eating habits. You’re going to love how nourishing and versatile it is.

How to Bring It Together

  1. Cook the legume pasta until just tender, then rinse under cool water to prevent it becoming too soft.

  2. In a large salad bowl, whisk together pesto, balsamic vinegar, olive oil, garlic if using, and a pinch of salt and pepper.

  3. Add the pasta to the bowl and toss gently until well coated.

  4. Mix in the lentils, kale and pumpkin seeds.
