Method
- Preheat oven to 180°C and line a baking tray with baking paper.
- Mix sweet potatoes in olive oil, salt and pepper.
- Put on baking tray and bake for 15 minutes (they should remain firm). Cool and set aside.
- Meanwhile, mix all the other veggies and kimchi in a mixing bowl.
- In a separate bowl, combine all the dressing ingredients and mix thoroughly. Add the mixed veggies and toss well. Then add the cooled sweet potatoes.
- Garnish with radish slices and enjoy!
