This colourful dish is a vibrant way to bring more vegetables to your plate. Chop the cauliflower and broccoli into small rice-like pieces, or pulse in a food processor.
Heat coconut oil in a large pan.
Add onion, carrot, salt, and pepper, then cook gently for about 5 minutes until tender.
Stir in broccoli, chickpeas, turmeric, curry powder, and lime juice. Cook for a few minutes until fragrant.
Add cauliflower and shallots, then cook for another 5 minutes. Keep the broccoli bright and the cauliflower just tender.
Taste and season as needed.
Finish with fresh coriander and a sprinkle of walnuts if using. Serve warm.
