Warm Asparagus & Rocket Salad with a Savoury Twist

This simple yet satisfying salad is a beautiful way to enjoy spring vegetables while adding a burst of flavour to your plate. With roasted asparagus, peppery rocket, and a touch of parmesan, it’s light, fresh and perfect as a nourishing side or a quick lunch. You’re going to love how easily it comes together and how versatile it is for everyday meals.

Quick and Easy Salad Assembly

  1. Preheat your oven to 180°C.

  2. Rinse the asparagus and trim off the woody ends.

  3. Place the spears in a shallow baking pan with a splash of water.

  4. Bake for 10 minutes until just tender but still vibrant green.

  5. While the asparagus is still warm, toss it gently with rocket, garlic, olive oil, balsamic vinegar and grated parmesan.

  6. Season with salt and pepper to taste, then serve immediately.
