- Preheat oven to 200 degrees.
- Toss the beetroot and onion in the sumac, garlic, oil, salt and pepper.
- Place on a lined oven tray and cook for 30-40 minutes or until the beetroot is tender.
- Once cooked and cooled slightly, place all the cooked ingredients in a food processor along with the water and lime juice.
- Process until smooth. Season with salt and pepper, if needed.
- Serve alongside your favourite crackers or fresh, chopped vegetables.
