Warm & Comforting Strawberry Rhubarb Crumble
This wholesome twist on a classic crumble brings together sweet strawberries, tangy rhubarb and warming cinnamon for a dessert that feels like a hug in a bowl. Bringing It All Together

Preheat your oven to 180°C and prepare a large glass baking dish.

In a saucepan, simmer the rhubarb with filtered water and cinnamon on medium heat for about 15 minutes, then allow to cool slightly.

In a large bowl, combine the cooked rhubarb with strawberries, green apple, lemon juice, coconut sugar and optional lemon zest. Stir gently.

Spread the fruit mixture evenly into your baking dish.

In a separate bowl, combine almond flour, shredded coconut, chopped nuts, coconut sugar, oil, and vanilla. Add seeds or oats if using. Mix until crumbly.

Sprinkle the crumble topping over the fruit base, spreading evenly to cover.
