Method
- Place cucumbers on a large plate with the flesh facing up.
- In a medium sized mixing bowl, add tomatoes, onion, basil, balsamic vinegar, olive oil, salt, pepper, spinach and garlic.
- Mix well and squeeze lemon to taste.
- Spread bruschetta mix onto the cucumber slices.
- Sprinkle with chives to garnish.
- Enjoy!
