Ripe Tomatoes, finely chopped
Himalayan Pink salt
Chili powder (if needed)

A Warming Bowl of Flavour

This recipe brings together smoky eggplant, aromatic spices, and fresh herbs for a dish that is both comforting and versatile. Whether you enjoy it as a side, a light main, or even as a dip with crunchy carrot sticks, it’s a simple way to add variety and flavour to your meals. You’re going to love how satisfying and adaptable this one is.

How to Bring It Together

  1. Preheat the oven to 180°C. Prick the eggplants with a fork, place them on a tray, and roast until soft and tender, about 30–45 minutes. Let them cool.

  2. Scoop out the soft eggplant flesh and set aside.

  3. Heat coconut oil in a large pan, then sauté onion, ginger, garlic, and chilli until fragrant.

  4. Add tomatoes and salt, and cook for 10 minutes until softened.

  5. Stir in paprika, ground coriander, cumin, turmeric, and optional chilli powder. Cook for 2 minutes.

  6. Add the roasted eggplant flesh and stir through the garam masala. Mix well to combine.

  7. Garnish with fresh coriander before serving.
