A Bowl of Fresh Flavours
This vibrant salad is light yet satisfying, bringing together silky rice noodles, crisp vegetables and creamy avocado. It’s a refreshing option if you’re looking for a wheat-free alternative, and it makes a beautiful meal for lunch, dinner, or as a shared side. You’re going to love how the flavours balance between fresh herbs, zesty dressing and crunchy sesame seeds.
Simple Steps to Prepare
-
Cook rice noodles according to the packet instructions. Drain and set aside.
-
Slice the carrot, onion, capsicum and cabbage into fine strips.
-
Combine sesame oil, tamari or soy sauce, rice vinegar, lemon juice, salt and pepper in a jar. Shake well to make the dressing.
-
In a large bowl or serving plate, toss the noodles with vegetables, avocado, bean shoots, basil and coriander. Add the dressing and mix gently.
-
Garnish with black and white sesame seeds. Serve immediately, or enjoy while the noodles are still slightly warm.
The Wholesome Touch
Avocado provides a creamy texture and a source of healthy fats that help the salad feel more satisfying. Rice noodles are a gentle alternative to wheat-based noodles, making this recipe a lighter option that many find easier to enjoy. The mix of fresh herbs and raw vegetables adds crunch, colour and natural variety to your plate.
