This vibrant recipe brings together roasted pumpkin, golden tofu, creamy avocado, and crunchy sprouts over a bed of brown rice for a meal that is both grounding and energising. Toss the pumpkin with olive oil, garlic, salt, and pepper. Roast until tender.
