Roasted Broccoli with Cranberries and Lemon

Roasted Broccoli with Cranberries and Lemon
A tasty way to get your greens!

Method

  1. Pre heat the oven to 150 degrees. Cut the broccoli into florets and toss in 2 tbsp of olive oil. Spread evenly on a large roasting tray. Roast for aprox 20 minutes or until the florests have changed colour slightly are still crunchy and not cooked all the way through.
  2. Pre pare the dressing, in a jar add the lemon juice, sweetener of choice, mustard, balsamic vinegar, garlic and 2 tbsp of olive oil. Shake well.
  3. On a serving plate arrange the broccoli, sprinkle with the toasted almonds, cranberries and parsley and pour over the dressing.
  4. Serve warm or cold.
  5. Enjoy!
