Tasty Raw Pad Thai
This is a tasty fresh salad, full of delicious flavours!

Method

  1. Toss the zucchini, carrot, onion, herbs, cabbage, snow peas, capsicum and bean sprouts in a large bowl.
  2. For the sauce: Starting with the cashews in a high speed blender place all the ingredients except the olive oil and blend until smooth and creamy.
  3. Gently toss the salad with the sauce. Top with a few extra bean sprouts and coriander. Serve chilled.
