Simple Steps to Enjoy

In a large bowl, combine the zucchini, carrot, onion, cabbage, snow peas, capsicum, bean sprouts, and fresh herbs.

To prepare the sauce, add the soaked cashews, garlic, ginger, chilli, lemongrass, lime juice, tamari, kaffir lime leaves, coconut nectar, and coconut water to a high-speed blender.

Blend until smooth and creamy, then drizzle in the olive oil and blend briefly to finish.

Pour the sauce over the salad and toss gently until well coated.

Top with extra bean sprouts and coriander.
